You want your image resolution to be 600DPI. This is perfect for print books and gives you massive zoom capabilities in video editing software.
Use the Multiple function in your scanner if that's available. That way you can put multiple images face down on the scanner bed and the software will create individual images based on what it's seeing.
If you have an iconic image that could become a fullpage image like a cover or even bigger like a full spread of two pages, consider using your scanner's magnification function or raise the DPI to 800. Increasing image size at the time of scanning can produce stunning results.

Save your scanned images at JPG on the highest quality setting.
